Avocado Poke Bowl

The poke comes from Hawaii and is a salad of raw fish marinated in soy sauce and sesame and served in a bowl of rice, with vegetables, in our case radishes, spring onions, avocado and sprouts.

Ingredients

Main course For 4 people

250 g of jasmine rice

6 l of water

3 tablespoons of rice vinegar

600 g salmon for sashimi *

3 tablespoons of soy sauce

2 tablespoons of black sesame seeds, from Asian specialty stores

1 bunch of radish

1 spring onion

2 avocados

2 tablespoons of pickled ginger

radish sprouts for garnish

How to proceed

Preparation:

approx. 30 minutes

Rinse the rice with cold water. Bring the water to a boil, add the rice and boil over high heat for 1 minute. Lower the heat to low, cover the rice and let it cook for approx. 15 minutes, without ever mixing it. Remove the pan from the heat, shell the rice with a fork and season with the rice vinegar.

Cut the salmon into cubes and mix with the soy sauce and sesame seeds. Cut the radishes into sticks, the spring onion into rings. Halve the avocados and pit them. Cut the pulp into slices. Distribute the rice in the bowls and complete with the diced salmon, avocado, radishes, spring onion and ginger. Useful tips

Poke is a raw fish salad originally from the Hawaiian Islands.

* Attention: before consuming raw fish make sure that it has undergone the blast chilling process at your dealer at the fish counter.
